Grandma Theresa’s Apple Pie

Grandma Theresa had a knack for cooking and baking. And while she is no longer with us, her spirit lives on in her recipes. Oddly enough, apples are a symbol of immortality, so it seems only natural that her apple pie is my favorite. Grandma's apple pie was a staple among the family. It originated with a Good Housekeeping recipe but was tweaked to perfection after many years of baking pies. How is it best served? With vanilla ice cream and black coffee.


Ingredients:

  • 2 pie crusts (secret recipe)
  • 6 cups of peeled apple slices*
  • 2/3 cups of granulated sugar
  • 1/4 tsp. nutmeg
  • 1/8 tsp. salt
  • 1/4 tsp. cinnamon
  • 1 tsp. lemon juice
  • 1 tbsp. butter/margarine

*Using a variety of apple types gives the pie a nice flavor.

Directions:

Preheat over to 425° and line a 9” pie plate with the one of the two pie crusts. In a bowl, mix the sugar, nutmeg, salt, cinnamon and lemon juice together. Remove the skin and seeds of the apple and cut into small slices. Mix the apple slices with the cinnamon and sugar mixture. Place the mixed apples into the pie crust in the pie plate. Using a spatula, get the rest of the mixture leftin the bowl and place it on top of the apples.

Cut the butter into small cubes and place them throughoutthe apples. Use the second pie crust, place it on top of the pie and score with a fork around the crust to enclose the two crusts. Use the fork to ventilate the pie crust. Brush some melted butter and a little bit
of granulated sugar on top of the pie crust

Place into the oven and bake for 40 minutes. Lower the temperature to 375° for the last 15 minutes. Let stand and eat!
