Hammy’s Egg Sammy

Hammy’s Egg Sammy
Matt Smythe: Freelance Writer

A simple sandwich that my mom would trust me around the stove with when I was in my early teens. A bit of a misnomer since it doesn’t have ham (it’s a consistent request of my middle child Cam, whom I call Hammy)—this is the perfect wake-up any day of the week. But especially after a night of the aforementioned chili and Red Eye.

Which wasn’t my reason for making them when I was in my early teens.

Fry eggs over-medium. It’s ok to make them a little on the well-done side to stiffen up the yolk.
Cook bacon. Medium well. Toast rolls, lay 3 pieces of cheese on one slice, add mayo to the other. Place bacon on cheese. Eggs on bacon.
Maybe some pepper. Tops on each.

Grab a strong cup of coffee. Maybe some orange juice as well. If you’re feeling adventurous, grab a banana or some strawberries and blueberries.

Try not to bite your own fingers while scarfing
them down.

This is one in a series of posts about our new project, called The Table—a cookbook full of favorite recipes, and the images and stories that go with them, from each member of the Brandtatorship team. From breakfasts to entrées, desserts to cocktails, we’ll be unveiling a new recipe every other week through the end of the year. So pull up a chair. We’re glad to have you.
